
Sherri's Simply the Watercress Salad
This is a delicious, fresh, fruity salad with a great mix of textures and tastes!
Mix the following together in a bowl so they can marinade while you prepare the watercress:
- 1 tin of mixed beans, drained and rinsed
- 2-3 pieces of stone fruit diced (we had yellow peaches and plumcots - the cross between a plum and an apricot!)
- 1 lebanese cumber diced with seeds removed
- 1 packed of goats feta, crumbled
- 1 handful of fresh mint, torn
- Fresh peach juice
- Fresh diced ginger
- Sherri (Sherry) vinegar
- generous drizzle of olive oil
Add 1 bunch of watercress and serve with soba noodles tossed in tamari. Enjoy!
