
As you might know one of Sherri's roles in the studio is the selection and preparation of our organic communal lunches. She does a beautiful job and improvises weekly according to what's in season or what takes her fancy (generally purple things). She generally can't tell you what's for lunch until it's on the table and never uses a cook book!
Festive Fritters
Grate - 3 Carrots & 2 beetroots (what's the difference between and egg and a beetroot? .... you can beat an egg but you can't beat a root!)
Slice - 3 Ears of corn (that is a cob with it's jacket on)
Generous drizzle of Olive Oil
Splash of Tamari (that's wheat free soy sauce)
Chop - 1 Bunch of coriander
Juice - 1 Lime
Grind - Fresh pepper
Beat - 6 eggs
Millet Flour (or rice if you don't have it) - enough to hold it together
Combine all ingredients in the order listed. Cook in sandwich press (if you're at Polli) or in a fry pan (if you have a real kitchen). Serve with salad and chutney. Eat with friends. xx
Ps. It's our last day in the studio today before our Chrissie break. We're all looking forward to a relaxing New Year period and coming back bright eyed and bushy tailed in January.
